Sausage Gravy Breakfast Lasagna
The whole family will dig in to this delicious breakfast lasagna. Full of hearty gravy, made with Jimmy Dean® pork sausage, noodles, eggs and cheese, it's perfect for weekend brunch.
1 package Regular Premium Pork Sausage
1/4 cup sliced green onion (optional)
Vegetable oil (optional)
6 tablespoons flour
1/8 teaspoon ground black pepper
3 cups milk
8 oven ready lasagna noodles
2 cups (8 ounces) shredded mild cheddar cheese
1/2 cup sliced cherry tomatoes (optional)
Preheat oven to 350 degrees fahrenheit.
To prepare Sausage Gravy: Cook sausage in large skillet over medium-high heat 8-10 minutes or until thoroughly cooked, stirring frequently. Drain, reserving drippings; place sausage in bowl. If necessary, add enough oil to reserved drippings to measure 1 tablespoon. Return drippings to skillet.
Add flour and pepper to skillet; stir with wire whisk until well blended. Cook over medium heat 6-8 minutes or until browned, stirring constantly. Gradually stir in milk; cook and stir 3-5 minutes or until mixture thickens and comes to a boil. Stir in sausage. (makes about 4 cups gravy).
To prepare lasagna: Beat eggs in medium bowl with wire whisk until well blended. Add to large skillet; cook over medium-low heat 4-5 minutes or until eggs are set and still moist; stirring occasionally.
To assemble lasagna: Spread 1 cup gravy on the bottom of a greased 8X8-inch baking dish. Top with 2 lasagna sheets, 1/3 of the scrambled eggs and 1/2 cup of the cheese. Repeat layers two times ending with 1 cup gravy and 1/2 cup cheese. Cover with foil.
Bake for 30-35 minutes or until hot and bubbly. Let stand 10 minutes before serving. Sprinkle with cherry tomatoes and green onion before serving, if desired.
