Bacon and Brussels Slaw with Citrus Dressing

Everyone will enjoy this Brussel sprouts recipe with addition of delicious, smoky flavor of bacon!

Ingredients

  • 8 ounces Chopped Hardwood Smoked Uncooked Premium Bacon

  • 12 ounces shaved Brussels sprouts

  • 1 cup sliced almonds

  • 3 green onions, sliced in ½ in pieces

  • ½ cup parsley leaves, whole

  • ¼ cup olive oil

  • ¼ cup fresh orange juice (about 1 medium orange)

  • 2-3 tablespoon lemon juice (about 1 lemon)

  • 1 tablespoon dijon mustard

  • 2 tablespoons pure maple syrup

  • 1 tablespoon salt

  • 1 tablespoon black pepper

  • 1 cup panko breadcrumbs

  • ½ cup grated parmesan

  • ¼ cup reserved bacon grease

Directions

  1. Add chopped bacon to a medium, pre-heated skillet. As bacon heats, stir occasionally to break apart pieces until crispy, 4-6 minutes. Reserve ¼cup bacon grease for parmesan crumb.

  2. While bacon is cooking, assemble dressing by adding dressing ingredients to a small bowl and whisk until combined. To create dressing, combine olive oil, orange juice, lemon juice, Dijon mustard, maple syrup, salt, and black pepper.

  3. After bacon has cooked, continue to heat ¼ cup bacon grease over medium heat. Add breadcrumbs and parmesan to skillet, stir continuously (some clumping should occur) until golden brown, 3-4 minutes. Cool parmesan crumb while assembling slaw ingredients.

  4. In a large bowl, combine shaved brussels sprouts, green onions, and parsley leaves.

  5. Add dressing to slaw mixture, finish with sliced almonds and parmesan crumb. Toss until fully combined. Best served immediately after assembly.
