Jimmy Dean Low Fat Breakfast Burrito

Ingredients:
- 1/4 cup Jimmy Dean Reduced Fat Pork Sausage (browned, drained, and chopped)
- 1 whole wheat flour tortilla (10–12 in.)
- 2 egg whites
- 1 whole egg
- 1/8 cup low-fat cheddar or part-skim mozzarella, shredded
- 3 tablespoons pico de gallo
- 4 slices fresh avocado
- 2 tablespoons black bean purée (optional)
- Shredded lettuce
- Salt
- Pepper
- Non-stick cooking spray
Directions:
- Warm tortilla in microwave for approximately 15 seconds
- Whisk together egg and egg whites in a small bowl
- In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside
- On first third of tortilla, spread a thick layer of black bean purée
- Next, layer on the scrambled eggs
- Place the sausage on top of the scrambled eggs
- Then layer on the pico de gallo, lettuce, and avocado
- Sprinkle with cheese
- Fold together
- Top with sour cream
