Ingredients:

  1. 3 Tbsp. Butter
  2. 1 1/2 c. Yellow Onions, 1/2 dice
  3. 2 c. Chicken Stock
  4. 1 package Jimmy Dean Maple Roll Sausage, cooked, crumbled, drained
  5. 7 cups Dried Bread, 1/2 dice
  6. 1/2 tsp. Cayenne Pepper, ground
  7. 1/4 c. Raisins
  8. 6 oz. Dried Cranberries
  9. 3 Tbsp. Sage, fresh chopped
  10. 6 each Split Chicken Breast, pocket cut in breast
  11. Parsley, fresh chopped

Directions:

Preheat oven to 450 F. Begin by heating 3 Tbsp. butter in a small pot on medium high heat. Next, place the onion into the pot and cook on medium heat until onions become translucent. Now add 2 cups of chicken stock and bring to a simmer. In separate bowl, place the sausage, bread, cayenne pepper, raisins, cranberries and sage. Add the liquid mixture to the bowl and mix the ingredients well. Once the ingredients are mixed well place the stuffing into the chicken breasts. Bake the chicken breasts in oven for 10 minutes at 450 F. Reduce the heat to 350 F and bake for 25 more minutes or until the internal temperature is 165 F. When cooked garnish with parsley.
