Ingredients:
- 1 pkg. Regular Flavor Jimmy Dean Pork Sausage
- 1 egg, lightly beaten
- 2 tablespoons taco seasoning
- 1/4 cup breadcrumbs
- 1 can (4.5 oz.) diced green chilies, drained well
- 1/4 cup chopped black olives, drained
- 1 small tomato, seeded and finely chopped
- 4 oz. finely shredded cheddar cheese
- 4 green onion tops, sliced thinly (reserve 1 tablespoon for garnish)
- 1/2 teaspoon hot sauce (optional)
Directions:
Combine uncooked sausage, egg, taco seasoning and breadcrumbs; mix well. Form into 1-1/4" balls; transfer to ungreased miniature muffin tins. Use thumb or fingers to make a well in the middle of each ball, forming a cup with 1/4" thick sides. Set aside. Preheat oven to 350 F. Combine remaining ingredients; stir well. Fill each sausage cup with cheese mixture. Bake 20 minutes; cool 5 minutes before removing from tins. Drain well on paper towels. Serve warm, garnished with remaining green onion.
